2022 Misty Slope

A blend of four grapes: 38% Grenache Blanc, 29% Marsanne, 24% Clairette Blanche, and 9% Roussanne

Each grape was vinified by itself then blended and aged in neutral French oak for 5 months, blended together, and then aged for 1 month in stainless steel tank, filtered, and bottled.

2022 Sangiovese semi-carbonic

Primary: Whole clusters were placed by hand into stainless steel tank. CO2 was dispensed into the top of the tank then sealed commencing carbonic maceration. 16 days later, the tank was opened and the sugar of the grapes was tested at 6 brix. The grapes were then destemmed, foot treaded, and RC212 yeast was pitched and fermented to dry. 

Secondary: In barrel inoculation with Omega yeast
