2022 Fiery Slope

Harvest: Grenache 10/21, Counoise 10/6, Syrah 9/8

2023 Misty Slope

A blend of three grapes: 90% Viognier, 5% Marsanne, and 5% Roussanne

This wine was cofermented together. The Viognier came from Monarch Vineyard near Escondido and the Marsanne and Roussanne came from Lathom Farm and Vineyard. It was aged in stainless steel for 6 months.

2023 Misty Slope Reserve

A blend of three grapes: 90% Viognier, 5% Marsanne, and 5% Roussanne

This wine was cofermented together. The Viognier came from Monarch Vineyard near Escondido and the Marsanne and Roussanne came from Lathom Farm and Vineyard. It was aged in stainless steel for 12 months.

2023 Grenache

pH: 3.65

This wine is 95% Grenache and 5% Syrah. The Grenache was aged for 5 months in a 500L neutral French puncheon. The Syrah extracted for this wine had been aged for 5 months in a 500L new French puncheon. 


Primary: ICV-GRE

Secondary: In barrel inoculation with Omega yeast 
Vinification: Potassium metabisulfite (preservative)
Filtered: Yes

 

2022 Cabernet Sauvignon

Harvest: 11/1
Brix: 24.3
TA: 8.6

pH: 3.55

95% Cabernet Sauvignon from the Ballena Valley Vineyard and 5% Grenache. Aged for 18 months in new French Oak, then 3 months in stainless steel tank, before being bottled aged for 3 months prior to release. The 5% of Grenache mostly comes from the topping off of the wine to extend the barrel aging process.
