Aging: The Grenache aged for 6 months in stainless steel, then 3 months in neutral French oak. The Cabernet Sauvignon, Cabernet Franc, and Merlot was aged in a stainless steel tank (as it was our top off juice for the Coin Toss wine) for 9 months. The initial plan wasn't to make this wine as it was bottled. It was just a matter of figuring out what to do with several hundred liters of top of juice and not waste it. So we added Grenache to it and we loved it. The final product was blended and aged together in a neutral French oak barrel for 12 months.
